Food Flavor The Complex role of Flavors in foods Food flavor is determined by much more than just our basic taste buds on our tongue. While we can taste the basic flavors of sweet, sour, salty, bitter and umami, the full flavor experience comes from a complex interaction between these tastes and other sensory inputs.
